Raw dairy, as explained by my guest on Episode 42 of Lifelong Podcast, Really Tan Man, is milk that has not been pasteurized. While pasteurization is the process of boiling milk before it is sold to get rid of harmful bacteria, raw milk is left in its natural state.

According to supporters of raw milk, it is said to have more nutrients than pasteurized milk. This is because heat sensitivity denatures enzymes, vitamin A turns into weird chemicals, and other nutrients disappear during pasteurization. Additionally, raw milk is also believed to be easier to digest since it includes bacteria that can help break down lactose.

But why was raw milk pasteurized in the first place? The answer lies in the Industrial Revolution of the 1920s, when people started moving into cities and could not bring their cows with them. Cows were put in warehouses in cities and fed garbage, producing toxic milk that killed many people. Instead of relocating cows to Central Park, pasteurization was chosen to make the milk safe for consumption.

Fast forward to today, and the rise of refrigeration has made relocating cows to farms outside the city easier. However, pasteurization has become a legally protected monopoly, making it difficult for raw milk to be widely adopted.

Although raw milk is believed to be better than pasteurized milk, it is not widely available because only a few dairy facilities in each state are certified for pasteurization. These facilities have made it difficult for raw milk to be widely adopted, which has led to a thriving black market for raw milk.

So, is raw dairy worth the risk? While proponents of raw milk tout its health benefits, the potential risks cannot be ignored. Raw milk can contain harmful bacteria, such as E. coli, Listeria, and Salmonella, which can lead to serious illness or even death. This is especially concerning for vulnerable populations such as pregnant women, young children, and those with weakened immune systems.
