Tahini Za’atar Cauliflower

SCRUMPTIOUS RECIPE BELOW.

INGREDIENTS:

  • 1 head cauliflower

  • 1/4 c + 2 tbsp tahini

  • 1 T apple cider vinegar (ACV)

  • 2 cloves garlic, minced

  • 1 t avocado oil

  • 1/4 t paprika

  • 1/4 t dried parsley

  • 1/4 t salt

  • dash of za’atar spice

INSTRUCTIONS:

  • In a small mixing bowl, combine tahini, ACV, garlic, avocado oil, paprika, salt and a little za’atar.

  • Slice cauliflower into 1” “steaks”

  • Using a brush, evenly coat both sides of the “steaks” including the edges

  • Place on baking sheet, evenly spaced out, add some more salt

  • Roast on 400 for about 35-40 minutes, flipping at the 20 minute mark and drizzling with a little oil, timing may vary, so check often

  • Serve over hummus and sprinkle with za’atar seasoning and any other garnishes (I did fresh parsley)
